White rum, fresh mint and zesty lime, classically refreshing, the Mojito.
50ml White Rum (we used Bacardi)
1/2 Lime, cut into wedges
4 Sprigs fresh mint, plus extra for garnish
1tsp brown sugar
Soda water, to top up
Cut a lime in half and then cut the half into quarters. Add to a boston mixer glass and muddle with the brown sugar. Add the mint leaves (steams removed) and the rum and muddle some more.
Fill a highball glass with ice and pour over the muddled rum, mint and lime mixture.
Add in some more mint leaves for garnish, top up with soda water and give it a good stir to mix it all together.
Top up with more ice if necessary and add mint leaves and a lime wedge to garnish.
