White rum, fresh mint, colourful raspberries and zesty lime.
50ml White Rum (we used Bacardi)
4 or 5 Raspberries
1/2 Lime, cut into wedges
4 Sprigs fresh mint, plus extra for garnish
1tsp brown sugar
Soda water, to top up
Cut a lime in half and then cut the half into quarters. Add to a boston mixer glass and muddle with the brown sugar. Add the mint leaves (steams removed), the fresh raspberries and the rum and muddle some more.
Fill a highball glass with ice and pour over the muddled rum, mint, lime and raspberry mixture.
Add in some more mint leaves and raspberries for garnish, top up with soda water and give it a good stir to mix it all together.
Top up with more ice if necessary and add mint leaves, a lime wedge and a few more raspberries to garnish.
