Looking for something to jazz up your next BBQ and wow your guests? This BBQ pineapple is sweet, slightly spicy and has a secret little kick... it's tequila! 🇲🇽
2 Medium pineapples, cut in half and then into eight pieces
1 tsp Chipotle chilli flakes
Small bunch chopped coriander
Juice of 1 lime
2 Tbsp maple syrup (you can use agave too)
Salt & Pepper
100ml Golden Tequila (I love Patron, but it’s up to you. I’m not tequilaist...)
Cut the pineapple in half and then into eight pieces per length.
Add all of the ingredients into a bowl and whisk together.
Add the pineapple and the ingredients to a resealable food bag, mix well and leave to marinade in the fridge for one hour, turning occasionally.
Grill the slices on the barbecue for five minutes either side until you get some nice smokey char marks and the pineapple starts to caramelise.
