These skewers are quick, simple and super tasty. The perfect addition to any BBQ.
1 block firm tofu
1 red pepper
1 green pepper
1 red onion
Drain the tofu and press between two paper towels to remove any excess moisture, cut the tofu into 2cm cubes and place into a bowl.
Mix the dry spices (1tsp of etc, or to taste) in a bowl with a little olive oil and a the juice of half a lime. This should give you enough marinade to brush across 4-6 skewers.
Cut the vegetables into pieces matching the same size as the tofu cubes. Thread the peppers, onion, tofu and courgettes onto pre soaked wooden skewers and brush over the veggies. Leave to marinade for aslong as you can, 20 mins is ideal, then grill on the BBQ for approx 2 mins each side.
