Rum Black Bean & Oumph! Tacos

  • 1 bag of Pulled Oumph!

  • 50ml TakaMaka Rum (any rum will do... but TakaMaka is a rum I don’t like to drink but tastes great in dishes such as these)

  • 1 Large White Onion

  • 2 Peppers (Red & Green)

  • 1 Tin of Black beans

  • 4 cloves of Garlic

  • 1 Tbsp Chilli Powder

  • 1 tsp Smoked Paprika

  • 1/2 tsp Ancho chilli flakes

  • 1/2 tsp Chipotle chilli flakes

  • Salt & Pepper to taste

  • 8 x Corn taco shells

  • 1 head of Lettuce

To serve:

  • Guacamole

  • Daiya shredded cheese

  • Salsa

  • Vegan Sour Cream


Add Oumph! to pan and flambé with rum and cook off the booze.

Add black beans and spices, add 1/2 cup of water, add onion and peppers, cover and cook for 15 mins.

Heat taco shells in the oven, smash avocado, coriander and lime juice for a quick makeshift guacamole.

Take taco shell, add lettuce, then taco filling, top with cheese, salsa and guac and insert into face.
